Brownies
VEGAN, GLUTEN FREE, PALEO
Yield: 16 brownies
Ingredients:
- ¼ cup almond butter
- ¼ cup + 2 tablespoons coconut sugar
- ⅓ cup maple syrup
- ¼ cup coconut oil
- ¾ cup cocoa powder
- 1 teaspoon vanilla
- ¼ teaspoon salt
- 2 flax eggs (2 tablespoons ground flax + 6 tablespoons water, whisk together, set for 15 minutes)
- ½ cup almond flour
- ¾ cup vegan chocolate chips
Chocolate Frosting
- ¼ cup almond butter
- 2 tablespoons maple syrup
- 2 tablespoons cocoa powder
- 2 tablespoons water
Directions:
- Preheat oven to 325°F.
- Line an 8-inch square baking pan with parchment paper.
- Whisk together almond butter, coconut sugar, maple syrup and coconut oil.
- Whisk in cocoa powder.
- Add vanilla, salt and flax eggs.
- Fold in almond flour.
- Fold in chocolate chips.
- Bake for 28-36 minutes.
- Cool completely.
Frosting:
- Whisk all of the frosting ingredients.
- Frost brownies.
- Freeze 20-25 minutes to harden the frosting before cutting.
